Roasted pepper Caprese.Heres a recipe with olive oil.Take1lb bell peppers and2chillies,6 lightly crushed garlic cloves,1/3 cup extra virgin olive oil,sea salt,12 oz fresh mozzarella,basil leaves,1 tb white balsamic vinegar.Toss peppers,chillies and garlic in the oil in a heavy roasting pan or Dutch oven,season,toss again.Cover with foil,roast,turning occasionally til tender,2-21/2 hrs.Cool.Put half the peppers on a plate,reserve the rest for frittata,pasta or sandwiches.Put 2 tb of the juices in a bowl,add salt and garlic.Stir,drizzle dressing over salad.๐ธ
